Sapfo Olives

Production process

The olives are carefully handpicked from the tree and then placed in crates. At the end of the day, they are transferred to the factory and, after being sorted out according to size, they are being thoroughly cleaned.

Then they place in brine tanks for about seven months until their natural ripeness is complete. At the next stage, the olives are selected according to quality and subsequently put in new tanks with brine and vinegar.

The whole olive process has been completed and now we only need to package them.
