Ingredients
For one sea bass (approximately 500g)
- About ten kumquats, sliced
- One lime, sliced
- 1/2 lemon, sliced
- 8-10 bay leaves
- One sprig each of rosemary, thyme, and fresh oregano
- A little coarse salt and dried oregano for sprinkling
- 100ml extra virgin olive oil
- One red onion, sliced
- 1-2 cloves of garlic, thinly sliced
- A little black pepper is optional
Method
- Prepare the fish: Ask your fishmonger to clean the scales and cut the fish lengthwise from the belly.
- Rinse and dry: Wash the fish thoroughly and let it dry until you preheat the oven to 180°C.
- Prepare the baking dish: Place the fish in parchment paper and put it on a baking sheet.
- Stuff the fish: Open the belly of the fish and place the herbs (fresh oregano, rosemary, thyme), garlic, onion, lime, lemon, and kumquats inside.
- Season and seal: Close the fish and sprinkle with salt and dried oregano. Carefully pour all the oil inside the parchment paper, and use a non-flammable string to close the fish.
- Bake: Place the baking sheet in the oven for 45-55 minutes.
- Serve: Carefully open the parchment paper, place the fish on an oval serving platter, and serve.
